Tasting Tips
Five steps to tasking beverages: Look, Tilt, Swirl, Smell and Taste.
- Look at it in the glass: About one ounce should be poured into a clean glass (water provided). Hold the glass in front of a white background like a tablecloth or piece of paper. Some people even use the cuff or their shirt sleeve if it is white.
- Tilt the glass: Slightly tilt the glass and look at the edge of the sample. Notice the color.
- Swirl the glass: This allows oxygen to mix with the beverages to bring out aromas.
- Smell the bouquet: Swirl again. This releases more aroma or bouquet (or nose). Try to describe what you smell. Fine samples have a complex bouquet and several elements can be identified. Try closing one nostril at a time for different aromas.
- Taste it: At last! Take a small sip and slosh it around your mouth. Experts suck in additional air to release even more of the bouquet and enhance their ability to taste. Try to identify the flavors. Is it light or rich, smooth or harsh? What kind of after taste does it have? How long does the after taste last? Was it pleasant? Only one ounce is poured into your glass. There are many beverages to taste so it is important to pace your consumption.
There are limited quantities of the sample beverages. Please do not ask the servers to fill your glass s this decreases the number of tasting opportunities of others.
